GUILT-FREE WHIPPED CREAM

  1. Sprinkle gelatine over cold water in a small saucepan; let stand 1 minute.  Stir over low heat until gelatine is completely dissolved, about 5 minutes.  Remove from heat.  

  2. Gradually stir cream and sugar into gelatine mixture.  Cover and refrigerate at least 3 hours.  (Mixture will be firm.)  

  3. Beat with mixer at high speed until light and fluffy, about 3 minutes.  (Mixture will soften with beating, but will set more on standing.) Serve immediately or store covered in the refrigerator for up to 1 week.  Before serving beat at high speed 5 minutes.

A wonderful addition to any weight watcher�s recipe file! A soft-set cream with that dairy richness, delicious on biscuits or desserts but not stiff enough for piping.

Makes 3 cups (750 mL).
   

VARIATIONS:

Without sugar:
Replace sugar with 1 pkg low-calorie sweetener.
 

Almond/Vanilla/Rum:
Add 1/2 tsp (2 mL) almond, vanilla or rum extract with cream.
 

Chocolate:
Add 1 tbsp (15 mL) unsweetened cocoa powder and sugar to taste, with cream.
