FRESH FRUIT FLAN WITH EASY FRUIT GLAZE

  1. Combine graham crumbs, sugar, cinnamon and butter.  Press onto bottom and side of an 11-inch (28 cm) flan pan with removable bottom.  Bake at 375�F (190�C) 8 minutes; cool. 

  2. Sprinkle gelatine over cold water in a small saucepan; let stand 1 minute.  Stir over low heat until gelatine is completely dissolved, about 5 minutes.  Remove from heat.  

  3. Place cottage cheese in food processor or blender container; process until smooth and creamy.  Blend in pineapple juice, milk, sour cream, sugar and lemon juice.  With machine running, gradually add gelatine mixture through feed cap; process until blended.  Chill until mixture is slightly thickened, about 50 minutes; stir occasionally. 

  4. Pour mixture into crust.  Refrigerate until set, about 3 hours.  

  5. Remove side of pan from flan, top with fresh fruit and spoon "Easy Fruit Glaze" over surface of fruit to cover.  Refrigerate until set, about 1 hour.

A winning trio: a crunchy cinnamon crust, a rich and creamy filling, a topping of glazed fresh fruit.
