  1. Combine gelatine and sugar in a
    small saucepan.  Stir in 1 cup
    (250 mL) of the cold water;
    let stand 1 minute.  Stir over
    low heat until gelatine is
    completely dissolved, about
    5 minutes.  Remove from heat.
     

  2. Stir in remaining water, lime juice,
    Tequila, liqueur and lime peel.
     

  3. Transfer mixture to a 4-cup (1 L) bowl.  Chill in freezer until almost firm, about 1-1/2 hours. 

  4. Beat mixture until creamy and smooth with mixer or food processor.  Freeze in tightly covered container until firm, about 3 hours.  Let stand at room temperature about 1/2 hour before serving.

YUM! Real Margaritas with the tang of fresh limes.  Your freezer does all the work!  Great as a palate cleanser between courses or as a dessert.  To serve, rim glasses with granulated sugar and top with finely grated lime peel.

Makes 6 servings.
  

TIP:
You will need about 7  limes to get 3/4 cup (175 mL) juice.  To extract the most juice from limes, roll them on the counter top, pressing down firmly with palm of hand.  Use a zester to get finely grated lime peel.
