  1. Sprinkle gelatine over cold water in a medium saucepan; let stand 1 minute.  Add sugar.  Stir over medium heat until mixture comes to a boil; reduce heat and simmer 5 minutes.  Remove from heat; cool. 

  2. Place watermelon in food processor or blender container; process until smooth.  With machine running, gradually add lemonade concentrate and gelatine mixture through feed cap; process until well combined. 

  3. Pour into fourteen (2 oz/56 g) frozen pops moulds; insert sticks.  Freeze until firm, about 3 hours.

A favourite summertime treat! Perfect for a large family gathering.

Makes 14 frozen pops.
  

TIP:
Cut, purée and freeze watermelon while it's in season.  You'll have it on hand to make frozen pops year round.  Small paper drinking cups and wooden craft sticks can be used to replace pop moulds.
