Knox Blox® made with E.D.SMITH Knox® and Fruit Juice

A classic family favourite, Knox Blox® are easy to make and fun to eat! These bit sized colourful fruit juice jelly blocks are the perfect party snack. Knox Blox® can be made using E.D.SMITH Knox® combined with packaged flavoured gelatine or your favourite fruit juice. Both recipe variations result in jiggly blox bursting with flavour that are firm enough to pick up and eat with your fingers, even at room temperature!

Ingredients

5 pouches Knox® unflavored gelatine
4 cups (1 L) fruit juice (divided)

Tips

  • Sweetening Knox Blox® (variation 2) is an option, though not required. If sweetening is desired add in a small amount of sugar, honey or your preferred sweetener after the gelatine is dissolved.
  • Do not use pineapple juice – it will not set properly.
  • Use cookie cutters to cut set Knox Blox® into fun shapes. 
  • Mix gently to avoid too many bubbles forming in mixture.
  • Add whipped cream on the side as a topping option when serving.

Directions

  1. Sprinkle E.D.SMITH® Knox® Unflavored Gelatine over 1 cup (250 mL) cold fruit juice, let stand 1 minute. 
  2. Add 3 cups (750 mL) fruit juice, heated to boiling and stir until gelatine is completely dissolved, approximately 5 minutes. Sweeten to taste, if desired.
  3. Transfer the mixture to 9 x 13 inch (3.5 L) square pan, chill until firm, about 3 hours.
  4. Once set, cut into 1-inch (2.5cm) squares and serve.
