ZESTY CRANBERRY ORANGE RELISH

  1. Combine gelatine and sugar in a small saucepan.  Stir in cold water; let stand 1 minute.  Stir over low heat until gelatine and sugar are completely dissolved, about 5 minutes.  Remove from heat. 

  2. Stir in cranberries, orange peel and chopped orange.  Pour into sterilized jars; cool slightly. 

  3. Cover and refrigerate overnight until set.  Store up to 4 weeks in refrigerator or 1 year in freezer.

  
For a holiday season change of pace, serve this wonderful relish along with roast turkey.  The chunky texture of the uncooked cranberries complements the freshness of the citrus pieces.

TIP:
Buy several bags of cranberries while they are in season and freeze to have on hand to make this simple relish.
